History tells us that it is on this site that the first 60 hundred square meters of Fronton vineyards were planted 900 years ago.
When he took over the family estate in 1980, Denis Bocquier, the fourth generation to perpetuate the craft of his ancestors, restructured the vineyard: uprooting, new plantations, purchase of vines ... thus increasing the estate’s surface area to 30ha, 24 of which fall under the Fronton appellation. He successfully launched the sale of bottles in 1986. His sons Sylvain and Simon have recently joined him, one on the sales and marketing side, the other on the vineyard side.
The Château La Coutelière is located to the north of Toulouse on the second and third terraces. The vineyard is planted in somewhat dry, nutrient-depleted soils. It is managed following environmentally-friendly principles with the use of contact products (copper, sulphur). Working the soil helps to limit water stress: one row is grassed, the other ploughed. The vines are trained according to the single Guyot and Cordon de Royat methods so as to limit yield to around 35 to 40 hl/ha. Bunching, leaf stripping, harvesting green if necessary help to control them.
Reds: Depending on the vintage, they can be consumed young or one needs to wait for a few years until they reach full maturity. These reds are always pleasant, versatile, characterised by the Négrette grape and lesser or fuller bodied with spiced notes.
The rosé: This is produced by bleeding off. Produced mainly from Négrette grapes, Gamay and Syrah finish off the blend to result in a rosé rich in floral notes and supple on the palate (grilled meats, poultry, fish).
Whites: Sweet mystery remains the Estate secret made from Muscat, a highly aromatic wine ideal for cocktails and pastries.
